☀️ Beaches Turks & Caicos mini review & tips 🌴

I’m going to do another post with tips on dining as well as the extra add-on activities that we did!

* Download the beaches app before you go to have all the daily activities easily accessible. 
* There are free kids clubs, including one each for babies, toddlers, younger kids, and then tweens and teens where you can drop off your kids throughout your stay. There’s also daily & nightly activities such as karaoke and pool games and workout classes so there’s really something for everyone, not just little kids. The only downside for us was that the age groups went from 2 to 4 years and then 5 to 11 so mine would have had to be split if we dropped them off unfortunately. They also have nannies you can hire for a dinner out or during the daytime if you prefer. 
* There’s tennis, basketball, mini golf, Pickleball, croquet, ping-pong, giant connect four & chess, and tons of other things scattered throughout the property. Most have the equipment right there which is really convenient. The only exception was basketball and mini golf equipment which you could get at the activity hut on Caribbean Village.
* There’s a Sesame Street show at 6:30 every night right next to the French Village. On Fridays, there is a parade instead and a great location to stand for it is along the path from the Caribbean Village to the Italian Village. Afterwards is a street party and BBQ. 
* The French Village pool is very low-key with light music, swim up bar and not overcrowded. It also had a great baby splash area and zero entry area for toddlers. If you’re looking for more of a party atmosphere at the pool, definitely go to the Italian village pool or one of the Caribbean village pools.
* There’s a little train that runs through the villages each day which was super cute. 
* The French Village location is also right next to the waterpark. There’s something for everyone at the waterpark with multiple splash pads and slides of various sizes, including tube slides. My favorite was floating the lazy river with Sienna snuggling on me and holding onto Luca‘s tube 🥰

Easy Spring Dessert Tarts – Gluten Free

We hosted Marc’s parents for dinner this past Saturday, and I was really excited for the opportunity to cook and bake. I love both, but baking makes my heart the happiest. I always love an opportunity to try out a new recipe and wanted to make something that felt very spring dessert. Though it’s risky trying out a new recipe when hosting family or friends lol!

Thankfully I think these came out pretty good, and unless they were just trying to make me feel good {I don’t think that was the case lol}, the consensus was these were a hit! So I wanted to share the recipe with you because they were super easy to make but look really classy. They are a great light dessert, not super filling. And with a really fresh taste and so much fruit, there’s no guilt at all! 🙂 Graham cracker crust adds the perfect balance to the tartness of the fruits.

I’m allergic to gluten, so this recipe is gluten free, but you can feel free to use regular graham cracker/graham cracker crumbs if you prefer. I also made it dairy free because I prefer coconut cream over heavy cream so this recipe is very allergen friendly!

I apologize in advance that I just totally spaced on taking pictures because I was chatting with Marc’s parents while making these and also had dinner going on the stove, so pictures weren’t top of mind. I promise for my future recipes I will try to be better about taking photos! I totally forgot to take photos with the mint garnish too 🙁 but I promise, it makes them just that much cuter! And they smell so delish with the mint and lemon and lime, so fresh! Just the perfect spring dessert for entertaining!

Ok so here’s the recipe!

Easy Spring Dessert Tarts

Quick and simple personalized mini tarts that are perfect for spring entertaining!

Servings: 4 people

Ingredients Method Notes

Ingredients
  

Crust
  • 8-10 gluten free graham crackers or gluten free graham cracker crumbs
  • 5 tbsp unsalted butter {melted}
  • 1/4 cup sugar
Whipped Topping
  • 1 cup coconut cream {chilled} or heavy whipping cream if preferred
  • 1/3 cup powdered sugar
  • 1 tbsp freshly squeezed lemon juice
  • 1/2 tbsp freshly squeezed lime juice
  • 1/4 tsp fresh lime zest
Toppings
  • your choice of fruit – I used blueberries, raspberries, and blackberries
  • fresh mint leaves for garnish

Method
 

  1. Preheat oven to 350 degrees.
  2. Place the bowl of your stand mixer or the mixing bowl you will use for the topping in the fridge to get cool before using.
Crust
  1. If using graham crackers {not crumbs} break them up and place in a food processer. Add the sugar and melted butter to food processer. {Alternatively, if you do not have a food processer, you can place the broken pieces of graham cracker in a gallon size plastic bag lined with some parchment paper and use a rolling pin to crush them…this takes a bit more muscle! Then you can combine the sugar and butter with the crumbs in a bowl.} 
  2. Pulse ingredients in food processer until well combined.
  3. Press the graham cracker mixture into the bottom and sides of mini tart pans {you don’t need to grease them}. Make sure it’s nice and even and covers the whole bottom.
  4. Bake at 350 degrees for about 7 minutes. Remove when done and set aside.
Whipped Topping
  1. In a stand mixer with the chilled mixing bowl using the metal whisk attachment {or in your chilled mixing bowl with a hand mixer}, whip the coconut cream {don’t use the liquid part or only use a tiny bit of it} and powdered sugar until thickened and well combined.
  2. Add the lemon juice, lime juice, and lime zest and whip on medium-high speed until combined and it looks like a nice whipped cream consistency.
Assembly
  1. Top each crust {make sure they are cooled} with a few dollops of the whipped cream topping.
  2. Top with fresh fruit as desired.
  3. Garnish with a few leaves of fresh mint.
  4. Enjoy!

Notes

Feel free to play around with the amount of lemon and lime juices to get the perfect amount for your taste. I felt this amount gave it enough flavor to taste the fresh citrus without being too overwhelming.
